New butcher shop fills a niche in Great Falls

One reason why people shop at butcher shops is so they can buy certain products, such as pork belly, that they cannot find in their supermarkets. You also need a butcher for slightly more adventurous items like organ meats and wild game products, and for expert advice in cuts and serving sizes.

Great Falls now has a locally-owned butcher shop to call its own. After getting a slower than planned-for start due to the pandemic, Oliver’s Corner Butcher Shop opened its doors today to customers.

The shop will specialize in quality locally sourced meats, seafood, and charcuterie, along with fresh baked bread and various in-house prepared foods made daily.

Oliver’s Corner Butcher Shop will also carry cheeses, soups, pantry items like sauces and spices, and hopes to fill the void left by Cannon’s with its fresh seafood line-up.

Owner Steve Varani said on Wednesday that the shop was busy all day on opening day, except for a brief period while Georgetown Pike was closed due to an accident. He said that they had hoped to open before today, but the pandemic caused a delay in getting started, so they were unable to commence construction until November.

Nevertheless, the new business has had many enthusiastic reviews posted on NextDoor Great Falls in only its first day. The shop fulfills an important need in community, per the comments.
